This meal was so simple and so delicious! My favorite part was that I put the pan on the table, and everyone just dove right in. This really is the perfect summertime meal that has a little something for everyone.
Ingredients
3-4 ear of corn, chopped into 4-5 pieces each
1.5 lb petite potatoes, halved
1 lb shrimp
1 lb precooked andouille sausage, thinly sliced
¼ c melted butter
1 tbsp minced garlic
1 tbsp finely chopped parsley
Salt and pepper to taste
Directions
· Preheat oven to 400 degrees.
· Bring a large pot of water to a boil. Add the potatoes and corn to the pot and boil for about 10 minutes.
· Prepare a baking dish by lining with parchment paper.
· Drain water from the pot and spread veggies onto the prepared baking sheet along with the shrimp and sausage.
· In a small bowl, combine the melted butter, garlic, parsley, salt and pepper.
· Pour the butter mixture over everything and toss so everything is evenly coated.
· Bake at 400 degrees for 15-20 minutes until shrimp is fully cooked.
