Its no secret that I love my Instant Pot. Probably my favorite thing to make in it is shredded chicken 1: you can make it from frozen (for all those days when I forget to pull chicken out of the freezer until about an hour before I need to start making dinner) and 2: its so fast and easy! You can cook up all my frozen chicken in about 30 minutes and shred it so easily with a couple of forks, then use it for just about any dinner I want to make. I don’t even have to add any liquid to the pot because as the chicken defrosts, it creates its own liquid. Here is a super quick and simple recipe that my kids love (bonus points!)
Ingredients
3 frozen chicken breasts (if using thawed chicken, also add ½ cup of water or chicken broth)
1 cup BBQ sauce
Tostada shells
Shredded cheese (cheddar, mozzarella, pepper jack)
Green onion, thinly sliced (optional)
Directions
· Place frozen chicken in the instant pot, seal and set to manual high for 30 minutes.
· Allow instant pot to naturally release pressure before opening
· Preheat oven to 350 degrees
· Once pressure if released, open the instant pot and drain out any extra liquid. Use 2 forks to shred chicken.
· Add your favorite BBQ sauce (I like Stubb’s Original) and thoroughly coat chicken.
· Arrange tostada shells on a baking sheet. Top with shredded chicken and your choice of cheese. Bake in the oven until cheese is melted, about 5-7 minutes. Sprinkle with green onion.
· Serve with your favorite BBQ side dishes
