I am soooo not a morning person, just ask my husband. My weekday mornings consist of trying to get the kids up, dressed, fed, somewhat clean and out of the door and to school on time. You would think that as we are nearing the end of the school year that I’d have it down by now, but its still a struggle. I also tend to be a person that skips breakfast a lot. So, in an attempt to make my mornings go just a little smoother, I prepped a bunch of breakfast burritos that I can stick in the freezer and reheat in the mornings when we are running a little behind.
Ingredients
1 lb pork sausage
½ yellow onion, diced
1 bell pepper, any color, diced
10 eggs
1 cup shredded cheddar cheese
10-12 tortillas
Directions
· In a large skillet, over medium-high heat, brown the sausage until completely cooked through.
· Add in the onion and peppers and cook until onions become translucent and peppers begin to soften, about 5 minutes
· Meanwhile, beat the eggs in a large bowl.
· In a separate skillet, scramble eggs. Once they are cooked through and fluffy, removed from heat and set aside.
· Prep the burritos: Lay out 10-12 squares of aluminum foil and place a tortilla on eat one. Evenly divide the eggs and sausage mixture between each of the tortillas. Top with cheese. Roll up the tortilla into a burrito, making sure both ends are fully closed. Roll in foil and they are ready to freeze!
· Reheating: I take mine directly from the freezer, remove foil, wrap in a couple layers of paper towels and microwave for 2 minutes. The paper towel helps absorb the moisture and prevents a soggy burrito.
Variations: try adding Monterey or pepper jack cheese in place of cheddar. Add green chilis to your sausage mixture
