My go-to appetizer for any gathering! Also, the only way my husband will come within 3 feet of a mushroom. He actually likes these! Who wouldn’t with all the garlic and cheese stuffed into them? There is usually a little of the stuffing left over, which I like to snack on while the mushrooms are cooking 😊
Ingredients
12-18 mushrooms (cremini or button work well)
1 tbsp olive oil or butter
4 cloves minced garlic
1 c breadcrumbs
1 tsp oregano
1 tsp parsley
4 tbsp parmesan cheese
2 strips cooked, crumbled bacon (optional)
Directions
· Preheat oven to 325 degrees
· Add butter/olive oil to a large skillet over medium heat
· Remove stems from mushrooms, careful to preserve the cap for stuffing later. Finely chop the stems.
· Add chopped stems, garlic, breadcrumbs, oregano and parsley to the skillet, stirring occasionally
· Once the mushrooms are golden and soft, stir in the parmesan. The mixture should begin clumping together. Add bacon if using.
· Fill mushrooms with the stuffing and arrange in a baking dish.
· Bake for 25-30 minutes.
